An award-winning butcher will be passing on some of his secrets at a cooking masterclass later this year.
Ilkley ’s David Lishman, who has run his butcher’s shop for more than 20 years, will lead the class at the Cooking School, at Dean Clough, Halifax on Saturday, October 6.
The course will see participants learning how to make their own sausages from pork belly, finding out how essential it is to have the correct fat-to-lean ratio for the perfect sausages. They will then move onto demonstrations by Mr Lishman on boning a shin and a rib of beef.
Mr Lishman has twice been awarded the national title of Champion Sausage Maker and is also donating sausages for The Cooking School’s Great Yorkshire Pudding Challenge next month.
“I’m really looking forward to getting stuck in at Dean Clough,” he said.
“We’ve seen a real surge in people wanting to know more about our craft.
“There’s always a good story behind every meal, and none more so than when you’ve got involved in the butchery yourself.
