Black roasted water rat was on the menu for a theological student from a Keighley who is working in Mozambique.
Emma Crabtree, 20, is a member of the Keighley Apostolic Church on South Street and is working abroad for seven weeks.
She is set to return soon and her itinerary so far has included working in orphanages, bush farms, prisons, schools, clinics and building projects.
Her first week saw her camping at Mucombeze where, as guest of honour, she was given the best portion of the meal - black roasted water rat.
In a letter home she wrote: "I was even offered the head as a rare delicacy."
So far she has encountered a deadly snake and is working on various Christian missions.
Of her work, she wrote: "I may not be able to touch everyone's life everywhere, but I can touch someone's life somewhere."
Reverend Mike Royal of the Keighley Apostolic Church says: "As a church we really got behind Emma's fundraising campaign and we raised about £600 towards her trip.
"We held a fun day and a black gospel concert as well as separate collecting. It's a really worthwhile mission she's on and in her e-mails she says the work is a lot to do with empowering people to help themselves.
"Teaching people how to help themselves is very important. We're looking forward to seeing her and hope she will give a talk on her experiences when she gets back."
